Maple Glazed Sweet Potato Oats

Ingredients

1 sweet potato

1½ cups oats

1½ cups water

¼ cup brown sugar

½ teaspoon cinnamon

½ teaspoon allspice

½ teaspoon nutmeg

1 dash of pink himalayan salt

Instructions

Cook your sweet potato in the microwave or covered in a skillet with water until it’s soft. While your sweet potato is softening, cook your oatmeal according to the directions. Toasted Coconut Pumpkin Protein Bar

Drinking a protein shake every day can get a little old, no matter how many times you switch it up or go gourmet. Choosing to make a few power bars to carry you through the week can be just the switch to keep things interesting.

Ingredients

1½  cups shredded dried coconut

1 cup almond butter

½ cup softened butter

½ cup pumpkin puree

¼ teaspoon stevia drops

2 tablespoons pumpkin pie spice (or mix your own: cinnamon, nutmeg, allspice, ginger)

Instructions

Toast your coconut by spreading it across a baking pan and baking it at 375 degrees for 3-5 minutes. Set them aside to let them cool. Mix all the other ingredients together and then the mixture into a parchment lined 9x9 baking pan. Add the coconut to the top and let it sink in to the top layer of your mixture. Bake at 350 degrees for 20 minutes, or until it’s browned. Cool it on a wire rack and then slice it into squares. Enjoy!
